Menu Description : "Mixed greens, carrots, zucchini, green onions, peanuts. Tossed in a sweet and spicy dressing. Just find yourself a medium-size head of napa cabbage and a few other special ingredients and you're on your way to a perfect side dish for grilled grub, sandwiches, or as a quick solo snack. The menu mentions cappellini but we'll substitute with soba noodles that can be found in the supermarket aisle with other Asian foods the rice vinegar and chili paste will be over there too. If you can't find soba noodles, the thicker chow mien noodles will also work.
A few months back my husband and I went to dinner at Claim Jumpers with his parents while they were in town. I forget what I ordered that night but I do remember seeing that Thai Coleslaw was a choice for one of your side items instead of fries or potato chips. The waiter said yes, but forgot to bring me a sample. Oh well! I still was curious if it was any good or not, so off to the internet I went! There are actually several sites that have copy cat recipes from restaurants.
This cole slaw has a wonderful blend of flavors - but not too spicy for those with more delicate stomachs. We loved this at Claim Jumper, and now that we don't live near one, we can make it at home. Post a link to another recipe or group by pasting the url into the box where you want it to show up. We'll do the rest. I made this for dinner tonight all the different flavors was excellent,ty.
